Hey everyone...
I am so so psyched today...Harry potter And Deathly Hallows is released today and i am a super duper fan of harry potter.... am not able to contain my excitement... i couldn't sleep yesterday... And apparently i was in no mood to cook today... but i had to pass my time... isn't it? how could i wait until evening doing nothing... so i decided i will cook something and took a peek in my fridge. Then i found two bell peppers which i have forgotten all about. They were in the corner shelf and apparently rotting away... Quickly i took out my lappy and was searching what to do with those bell peppers quick and easy so that i get to eat something but tasty something... I am not a person who compromises on taste in any condition... :)
So i browsed through Priya's Easy N Tasty Recipes and lo here it is a beautiful Capsicum rice Recipe which was drool worthy and as the blog's name suggests easy to make too...
It was finished within minutes and i dint feel stressed at all :)
And true to its word.. it was so so so tasty... i was drooling and eating all at the same time :)

So here's what u need:
2 cups cooked rice ( Basmati preferably)
1 yellow bell pepper
1 red bell pepper
a few roasted cashews
a sprig of curry leaves
1/2 tsp mustard seeds
oil
Salt to taste
To grind into a powder:
1 teaspoon cumin seeds
1 teaspoon chanadal
1 Cinnamon Stick
2 Cloves
2 tablespoons coriander seeds
3 Dry red chillies
25 Peanuts
1 tablespoon sesame seeds

- In a pan, heat very little oil and roast all the ingredients in the to grind section. Actually you can dry roast them. It is optional to add oil. Let it cool and grind them into a fine powder. Set aside.
- Chop the bell pepper nd in the same pan used above add some oil and add mustard seeds and curry leaves. when the mustard seeds splutter add the bell pepper and fry for a few minutes.
- Add the masala powder and mix well. Remove from heat. Add Rice,salt and roasted cashews.Mix well.. Serve hot with curd and papad.

Yum! Love capsicum. I had once achieved the perfect recipe, but never got it duplicated. Will have to try this version.
