I tweaked it a bit... as i am very sensitive to coffee i added a mixture of coffee and chocolate in this cake. It turned out great. It was so spongy and yum... i seriously have no words. Wanted to name this cocoa mocha banana cake but dint want to spoil the name :)And the best part is it doesn't use lots of butter. Just a tablespoon will suffice.
Coming to the recipe...
Ingredients:
2 1/2 cups cake flour ( if using all purpose flour use 2 1/4 cups)
1 tablespoon melted butter
3/4 cup milk
3/4 cup sugar ( I added a bit less because my banana was too sweet. u can use 1 cup sugar)
1 cup mashed banana
1 teaspoon baking soda
1 teaspoon baking powder
a pinch of salt
4 teaspoons water
2 teaspoon instant coffee
2 teaspoons cocoa powder
- Sift the flour, baking powder, baking soda and cocoa powder. As i was using cake flour i dint sift. :)
- Add sugar and mix all the dry ingredients.
- In a bowl warm some water and add instant coffee. Mix well and add mashed banana, milk and butter.
- Add this mixture to the dry ingredients and mix well... U don't need a food processor or mixer to mix this and as my friend smitha was saying the other day about exercise... work it out.
- Pour into a prepared cake pan ( greased with butter and duster with flour). An 8x8 pan will do.
- bake for 30-40 min or until skewer comes out clean.
- Cool in the pan for 10 min. Serve when its cool just like that or with a topping.
