Butternut Squash and Pineapple Bread

Yay!!!! I got my new Sony VAIO  laptop and i am so excited to write my first from that :) I was so busy from 2 days exploring all the new things on my laptop... 
Coming to the recipe... remember i had roasted and pureed butternut squash made for my Butternut Squash and Oats muffin, so i had leftover squash puree and i wanted to make some soup.. instead i went for this beautiful and amazing bread.. i am so glad i did :) Yeah butternut squash soup would have been great but lets save it for next time!!!
Moreover i had a can of pineapple chunks in my pantry and i have to use it.. Boy!!! its time to clear my pantry.. it really is.. I am afraid how many expired or about to be expired stuff will come out once I start cleaning :D
This recipe is adapted from My Baking Addiction and i added my own addition of pineapple to it and of course with no oil or butter at all.. how cool and healthy is that? amazing.. isn't it?
Without further ado.. lets see the recipe...

Ingredients:
1 cup butternut squash puree (recipe follows)
1 cup pineapple sauce (recipe follows)
1/4 cup dried cranberries
2 eggs
3/4 cup white sugar
1/2 cup brown sugar
1 3/4 cup all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon cardamom

For Butternut Squash puree:
1 butternut squash
1 tablespoon canola oil
  • Preheat the oven to 400 F. Quarter the butternut squash and place it in a wax paper lined baking sheet.
  • Add oil and bake for 35-40 min. Mine took 45 min. Let it cool and the skin will come off easily. The squash will be so soft and like pulp. You can just mash with hands. If not use ur blender to make a paste and keep it aside. You can store the remaining squash in the refrigerator when its cool.
For the Pineapple Sauce:
1 can pineapple chunks
1 tablespoon sugar
1 cinnamon stick
  • In a small pan, add the pineapple chunks along with the juice, sugar, cinnamon stick and cook until the pineapple is caramelized. Let it cool or if you add to the cake mix, you will cook the eggs.
For the bread:
  • Preheat oven to 350 F. Grease and flour an 8.5 x 4.5 x 2.5 inch loaf pan or line it with parchment paper.
  • In a large bowl, mix together butternut squash puree, pineapple sauce, eggs and sugars until thoroughly combined.
  • In a separate bowl, mix together flour,dried cranberries, baking soda, salt, cinnamon, nutmeg and cardamom.
  • Mix the dry ingredients into the wet ingredients just until combined. Do not over mix it .
  • Pour into a prepared pan and bake for 55-65 minutes or until the skewer inserted comes out clean.
  • Let it cool and then cut into slices using a serrated knife.
